An enthusiasm for food and a childhood ambition to become a chef inspired Nik Tinney to open his own restaurant in his hometown.
From humble beginnings washing dishes at the Brookdale Hotel in Truro, Nik moved to London for a 3 year apprenticeship at Langans Brasserie. From there he worked at a number of London’s top hotels and restaurants.
Returning to Truro after 16 years, with his wife Traci in 1999 they opened Saffron, with the aim to produce excellent food made from local ingredients, cooked to order and served in relaxed friendly environment at reasonable prices.
Since then the eclectic menu style and the passion with which it is produced has meant Saffron has become one of Truro’s most popular restaurants.
Nik attributes their success partly to the quality and freshness of the ingredients he uses. He is committed to sourcing as many of his ingredients from local farmers and producers as possible.
Menus are changed weekly in accordance with availability of fresh ingredients and the seasons. Although this makes menu writing challenging, it is worthwhile as it enables Nik to capture the true flavours of his ingredients.
All food is produced on the premises including the bread, which is baked daily and the biscuits served with the morning coffee.
